The Flank Steak is cut from the abdominal muscle of the cow, or the Flank. It is tougher than other beef cuts, and therefore works best as London Broil or as part of a fajita or stir-fry recipe. We wet age this Flank Steak for 20 days in order to lock in that delicious beefy flavor.
