The Center Cut Tenderloin Roast, also known as a Chateaubriand, is a particularly thick cut from the tenderloin. We adhere to the traditional European Chateaubriand roots, and take ours from the tenderloin, versus the top sirloin that is used by many others. Our 2 lb USDA Prime Center Cut is wet aged for 20 days and is one of the most sought after of all the beef roasts - it is leaner than most, and is supremely tender. We will sous vide your steaks to 130 degrees and all you need to do is ensure they are at room temp and sear them on a hot skillet or open flame like you mean business.
